With thanks to Pantryman, the recipe of the month is:

PANTRYMAN EASY FRUIT CAKE

Group 1
500gms    Fruit Cake Mix
250mls     Water
3                 Eggs

Group 2
900 gms  Pantryman fruit mix
1 cup         Almonds slivered (optional)
1                Grated lemon rind (optional)

METHOD
Blend Group 1 together on low speed for 1 minute.
Scrape down, blend for a further 3 minutes on second speed.

Add Group 2 and blend for 2 minutes.
Place in greased and papered prepared cake tin (approx 20cm x 20cm) and bake for 3 hours at 160C.

Makes a beautiful moist fruit cake.
