Easy Banana Muesli Muffins


Serving size: approx 12 large or 15-20 small muffins
Cooking time: approx 30 minutes

Ingredients

250g Charlesworth Natural Muesli
1/2 cup raw sugar
1 1/4 cup self raising flour
1 tsp baking powder
1 small ripe banana (mashed)
1/3 cup vegetable oil
1 cup low fat milk
1/2 tsp vanilla essence

Method

Pre-heat oven to 200 degrees. Place 200g (2 cups) of Charlesworth Natural Muesli and all other dry ingredients in a large mixing bowl. In another bowl combine the banana, oil, milk and vanilla essence.

Pour the liquid mixture into dry ingredients and mix lightly to combine.

Spoon the mixture into well oiled and paper lined muffin tins. Fill to 3/4 full. Sprinkle with remaining Muesli.

Bake 15 minutes (fan forced oven) or 20 minutes (conventional oven).

For a healthier variation try substituting 1/2 cup of sugar with 1 tblspn honey and 1/3 cup vegetable oil with 2 tblspn of vegetable oil and an extra 1/4 cup of low fat milk.
